When I first saw these, it was love at first sight! They make a great addition to any Christmas platter, and I will be serving mine with our Christmas cheese course.

Phantom Forest November Recipe

You need:

  • One punnet large strawberries
  • One cup cream cheese
  • vanilla paste from one vanilla pod
  • Icing sugar to taste
  • Black sesame seeds for the eyes

I garnished mine with gold dust and mint, which is great for adding a bit of sparkle, but they look just as cute without.

Remove the stalk from the strawberries, then cut off the point of the strawberry which will be the Santa hat, and hollow out strawberry for the filling.

Beat cream cheese, sugar and vanilla till smooth. I find the blender works best for this, to get rid of all the lumps.

Place filling in a piping bag or a clean sandwich bag with the point cut off.

Pipe the filling into the middle of the strawberries, and top each with it's "hat". Dot two buttons on the body of the strawberry top hat with a dot and use black sesame seeds for the eyes. If you are not serving your Santas straight away, store in the fridge.

And, there you go - super-cute Santas that will add a delightful touch to your festive table.
